BREAKFAST QUESADILLA

INGREDIENTS: 

  • 2-3 tbsp TOFG SPG

  • 4 tortillas of choice

  • 8 eggs, whisked

  • ½  Onion, chopped

  • 1 medium sized Tomato, diced

  • ½ cup White Mushrooms, diced

  • 4 slices of bacon, cooked and chopped

  • 2 Bell Peppers (color of your choice), diced

  • 1 cup of kale or spinach

  • 1 bag cheddar cheese

INSTRUCTIONS:

  1. Chop veggies.

  2. Cook bacon until crispy and chop, set aside.

  3. In a pan over medium heat, throw in onion, mushrooms, bell pepper, kale or spinach, TOFG SPG and cook down (5-6 minutes).

  4. Once veggies are cooked down, add in your 8 whisked eggs. Once eggs are cooked, take off heat, add in chopped bacon and set aside.

  5. On a griddle lay out 4 tortillas or individually place a tortilla in a pan, over medium heat. Add a sprinkle of cheese. When cheese is starting to melt, add your cooked egg veggie mix. Watch carefully and fold the tortilla in half to make quesadilla.

  6. Serve with green onions, guacamole, sour cream, pico de gallo, etc.

  7. Enjoy!
